What is bread? well Bread is a staple food prepared from a dough of flour and water, usually by baking. In the science of bread making, simply a bread is the product of baking a mixture of flour, water, salt, yeast and other ingredients. The basic process involves mixing of ingredients until the flour is converted into a stiff paste or dough, followed by baking the dough into a loaf.


To make good bread, dough made by any process must be extensible enough for it to relax and to expand while it is rising. A good dough is extensible if it will stretch out when pulled. It also must be elastic, that is, have the strength to hold the gases produced while rising, and stable enough to hold its shape and cell structure.

So, today's product, my Intermediate class will produce 2 product for sell today. The product will be Dinner Rolls & Farmhouse bread. The Farmhouse bread will be made to Tuna Sandwich. The recipe i will list it below. 

Dinner Rolls

Ingredients:

Bread flour - 600gm
Castor sugar - 110 gm
Yeast - 4 tsp
Egg - 1 no
Water - 300 ml
Margarine - 60 gm

Butter & milk (Core)
Parmesan cheese (Toppings)

Baking process:

1. In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs.

2. Add in 5½ cups of flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Slowly add the remaining ½ cup of flour until the dough pulls away from the sides of the bowl. The dough mixture should be slightly sticky and soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.

3. Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise 90 minutes.

4. Lightly grease a baking sheet. Punch down the dough and form into 24 rolls. Place on the greased baking sheet in six rows of four.

5. Cover and let rise 1 hour.

6. Preheat oven to 375 degrees. Bake the rolls for 12 to 14 minutes, until lightly browned.

7. Remove rolls from oven and brush with melted butter.

8. Serve the rolls warm, or to cool, let rest on the pan for 15 minutes before transferring to a wire cooling rack. Once cooled completely, store in a plastic bag.

Farmhouse Bread

Ingredients

Bread flour - 4 cups
Flour - 2 cups
Yeast -2 tsp
Warm water - 2 1/4 cups
Evaporated milk - 1 can
Honey - 3 tbsp
Oil - 1/4 cup
Salt - 1 tsp 

Baking process:

1. Dissolve yeast and 1 cup warm water in a large mixing bowl. Let rest 10-15 minutes.

2. Add salt, sugar, shortening and 3 1/3 cups warm water.

3. Gradually mix in 10 cups of flour. Add up to 2 more cups until dough is no longer sticky.

4. Knead for 10 minutes. Cover the bowl and let rise for 1 hour until dough doubles in size.

5. Punch down dough, form into 4 loaves, place into loaf pans and let rise again until double in size(about an hour).

6. Place in preheated oven at 375 degrees and bake until golden brown (about 35 Minutes)
